BAKED CAULIFLOWER AND MEAT PAN CAKE
INGREDIENTS...
1 1/2 pound Ground Beef / 20% fat
2 to 3 Tbsp. Butter / melted
2 1/2 c Cauliflower /pulsed in the food processor
6 small/medium Potatoes / peeled and shredded
4 medium Tomatoes / sliced round.
1 1/2 c Zucchini / shredded
1 small red Bell Pepper
1 medium Onion / chopped
3 to 4 cloves of Garlic / or more
1 box of Mushrooms / sliced thin
1/2 c Chives or Green Onions
1/3 c Parsley/ chopped
1 ( 8 oz.)Mozzarella/ shredded
SEASONINGS & OTHER....
1 c Flour
4 Tbsp. Olive oil
1/2 Tbsp. Black Pepper or more
1/2 Tbsp. Salt or more
2 Tbsp. Dry Cilantro Leaves
1 Tbsp. dry Parsley
1 Tbsp. Aleppo Pepper / or Cayenne Pepper
4 Eggs / beaten
** Mix all above dry ingredients together in a bowl & set aside. The 4 Eggs beaten and olive oil will be added in later. **
DIRECTIONS...
In the food processor place the bight size cut cauliflower and the half of the garlic and pulse few times, until crumbly like small popcorns.
Remove it from the mix bowl and place in a sieve, sprinkle little salt on top and mix with a spoon. Leave to drain the liquids out. Squeeze with hand also.
Now in the mix bowl place the red Bell Pepper & the cut up onions. Sprinkle with a little salt again and pulse few times then place in the sieve also to drain. Squeeze with hand also.
Mix both together now and set aside.
Grate the zucchini. Place in the sieve, sprinkle little salt and drain all the liquid out.
Place in the bowl with the other drained veggies. Add the motzzarella cheese, diced chives, chopped parsley, melted butter, olive oil, beaten eggs, and the ready mixed and seasoned flour.
Mix it up with a fork.
Give a taste test.
If anything needs to be added more like seasonings? Add now.
Grate the potatoes, add a little salt and place in the sieve and let drain out the liquids. Squeez by hand also.
Mix thoroughly with a fork.
Taste test again!
It's all up to your liking.
Cover it with saran wrap and place in the refrigerator for 20 minutes to 30 minutes to rest.
Preheat the oven on 375F to 400F
Spray a large baking tray with cooking spray and sprinkle the bottom of tray with bread crumbs.
Carefully press on top without disturbing the bread crumbs the veggie mix.
Use all. Press down gently.
Bake until bottom and top are rich golden brown.
If for any reason the bottom cooks faster than the top which in some ovens it will do so, Not to worry 😄
Simply put a cookie sheet under your tray and raise it up to the top shelf of your oven and bake until the top turns golden brown, but please keep an eye open so it does not burn.
While your veggie cake is in the oven baking prepare the meat.
In a large Pan add some butter and some Olive oil the chopped onions garlic and the ground meat. Sautee for a few minutes.
Add the seasonings we used above as much as you like to flavor the meat.
Remember not to overcook the meat! Meat has to be cooked halfway only.
Since it will be baking more in the oven . This way the meat stay juicy.
Once the cauliflower cake has browned, remove from oven and directly pour and spread out the ground meat on top. With a large spoon gently pressing down into the cake.
This will secure the meat from falling off when time to cut and serve.
Now add the sliced tomatoes on top sprinkle with salt and black pepper and little bit of the seasonings, then follow with the yellow bell peppers and mushrooms. Season again very lightly and place back into the oven and bake until the tomatoes and bell peppers are lightly browned.
When completely baked remove from the oven and set aside with the top covered with a foil for about 10 to 15 minutes to rest before you cut and serve.
